Taco Bake Ingredients

You’ll need:

  • 1½ lb ground beef
  • 1 onion, chopped
  • 1 pkg taco seasoning mix or homemade taco seasoning
  • 1 (10-oz) can Rotel, not drained
  • 1 (2.25-oz) can sliced black olives
  • 1 (15-oz) can whole kernel corn, drained
  • 4 taco-size flour tortillas
  • 2 cups cheddar cheese, divided

Substitutions and Additions 

MEAT: You can swap ground beef for ground pork or ground chicken. 

TORTILLAS: You can substitute corn tortillas for flour ones, or if you’re looking to reduce the carbs in this dish, remove the tortillas. 

MIX-INS: You can add so many delicious things to this easy taco bake, like peppers, beans, or chilis. 

TOPPINGS: Top this taco bake like you would any other taco! We like shredded lettuce, diced tomatoes, sour cream, and guacamole. 

CHEESE: You can swap out cheddar cheese for a different kind, like Monterey Jack or pepper jack, or combine different types of cheese for even more flavor. 

How to Make This Taco Bake Recipe 

PRO TIP: Preheat your oven to 350°F before you start preparing for seamless cooking. 

STEP ONE: In a large skillet over medium-high heat, cook the ground beef and onions until the meat is browned and the onions are tender.

STEP TWO: Stir in the package of taco seasoning and the amount of water indicated on the package directions, then cook for 8 to 10 minutes.

STEP THREE: Add the Rotel, olives, and corn.

STEP FOUR: Spray the bottom of a 9 by 13-inch casserole dish with nonstick cooking spray. Place tortillas on the bottom of the baking dish.

STEP FIVE: Evenly spread half of the beef mixture over the tortillas.

STEP SIX: Sprinkle one cup of cheddar cheese over the meat layer, then place another layer of tortillas over the cheddar cheese.

PRO TIP: If possible, shred the cheese yourself. Pre-shredded cheese won’t melt as well in the oven. 

STEP SEVEN: Spread the rest of the taco meat mixture on the tortillas, then sprinkle the last cup of cheese on top.

STEP EIGHT: Bake in the oven at 350°F for 20 minutes or until bubbly.

Storage 

IN THE FRIDGE: Place leftovers in an airtight container and store them in the fridge for up to three days. 

IN THE FREEZER: Once fully cooled, place the leftovers in a freezer-safe container. This easy taco bake will keep in the freezer for up to three months. 

REHEATING INSTRUCTIONS: From frozen, allow the taco bake to thaw in the fridge overnight, then reheat it in the oven at 350°F until it’s warmed through again. Or, microwave it for 2-3 minutes in individual servings until heated.

Ingredients
  

  • pounds ground beef
  • 1 chopped onion
  • 1 package taco seasoning mix
  • 10 ounces Rotel not drained
  • 2.25 ounces sliced black olives
  • 15 ounces corn drained
  • 4 taco-size flour tortillas
  • 2 cups cheddar cheese divided

Instructions
 

  • Place the ground beef in a skillet along with the onions and cook until the beef is browned and the onions are tender.
  • Stir in the package of taco seasoning along with the amount of water indicated on the package directions. Cook for 8 to 10 minutes.
  • Add the Rotel, olives, and corn.
  • Spray the bottom of a 9×13-inch dish with nonstick spray. Place tortillas on the bottom of the dish. Spread half of the meat mixture evenly over the tortillas.
  • Sprinkle one cup of cheese over the meat layer. Then, add another layer of tortillas on top of the cheese.
  • Add the rest of the meat on top of the tortillas and the last cup of cheese on top of the meat.
  • Bake at 350°F until bubbly, about 20 minutes.
  • Serve with sour cream and other taco toppings as desired

Notes

  • For an even quicker cooking time, ground beef can be cooked ahead of time. Store in the refrigerator for up to 3 days or in the freezer for up to a month.
  • You can assemble this the day before and then bake it before serving.
